For breakfast and lunch, you have to go to the other parador that is very close. I have been told that soon you will also be able to have breakfast here.
There are some minor issues since it is newly opened and some things do not work as they should, but the staff is making an effort to solve everything. By the way, the breakfast at Gil Blas is very good.
Highly recommended if you want to visit Santillana del Mar, and if you do, do not forget to go to Santa Justa beach.
