We believe that many coffee aficionados have had the chance to stop by and taste coffee brewed by Khun Pi Piyachat Traithavorn, owner of Gallery Drip Coffee, or at the very least have heard this barista’s reputation as the “Drip King.”
However, there are many aspects that remain unknown: besides his outstanding coffee-making skills, he is someone who studies and understands Thai coffee beans deeply and contributes to improving both the quality of Thai coffee and the livelihoods of Thai farmers.

“I’ve loved drinking coffee since my teenage years. At first, I started with ordinary coffee and became so captivated by its flavor that I felt compelled to learn more about it.”
Mr. Pi shared that his beginnings are likely similar to many coffee enthusiasts: once he developed a taste for coffee, at a certain point he realized he wanted to study it more deeply and seriously.

Once I started working and had saved up some money, I began buying coffee equipment.
I got to know the drip coffee technique (Drip), which at that time was still relatively unknown, and gradually practiced and refined my brewing skills.
After that, I discovered that I was more captivated by the appeal of drip coffee than other brewing methods, because it uses fewer tools and focuses on the skill and knowledge needed to bring out each coffee’s natural flavors.

“The nickname ‘Drip King’ started out as a playful tease among a group of friends who are all coffee lovers,” Pi explained when we asked about its origin.
Pi said that, at first, being teased by his friends was simply amusing, but as more people began calling him that, it became both inspiration and motivation for him to hone his own drip-coffee skills so he could truly live up to the name.

Pi told me that he’s always been deeply involved in visiting coffee farms and has had the opportunity to meet and talk with many farmers. This has made him want to be part of driving Thailand’s coffee industry forward.

Many times he has noticed that many farmers, who own high-quality produce, have never had access to or tasted high-quality Thai coffee even once.
Therefore, he often carries simple drip equipment with him every time he visits a coffee farm to brew coffee for the farmers to sample, while teaching basic drip methods using only a few tools, because he wants everyone no matter who they are to experience the taste of high-quality Thai coffee.

P’Pi also concluded proudly: “Coffee is already a Soft Power. In fact, we can use Thai coffee to drive the country forward because today Thai coffee has been developed to a quality that rivals world-class coffee, with a complex and distinctive flavor.”

After we listened to the various inspirational stories shared by Khun Pi, Khun Pi went on to discuss coffee from different perspectives, such as how society and the environment influence coffee’s flavor, as well as the origins and inspirations behind drip coffee brewing.
