The salt bean paste exudes a very elegant taste. Appetizer ◎ The "persimmon white sauce" is of course delicious, but the acid of the red fruit pomegranate neutralized the sweet persimmon and white sauce ◎ ◎ Minoage was not captured in the photo. Thin slices of potatoes, quai carrots, etc. are wrapped in batter and fried as if covered in a straw raincoat. Crispy texture is good ◎ ◎ "Chinzansho" is not captured in the photo. You can feel salty like butter when chewing, I don't like bitterness ◎ ■ Change of bowl (mud jar steamed) ■ Matsutake mushrooms, carp, shrimp, mitsuba, and sudachi are found in the earthenware pot. The umami was condensed in the clay jar. If you put raccoon dumplings in your mouth, they will melt softer than jo. Matsutake mushrooms were the first and last of the year. ■Zori■ ◎ Shime mackerel is tightened in the highest state of salt plum ◎ ◎ Grilled sea bream has fine fat between the skin and the body, and this part is very delicious. Pork with mustard in sauce is the best marriage. I spooned the sauce until the end. ■ Pottery ■ ◎ Grilled yellowtail with pear sleet ◎ Yellowtail grilled in luster and color is often entwined with sweet and spicy sauce. The grated radish is served with pears to ease the spiciness. ■ Strong sakana ■ ◎ Yamaguchi Wagyu beef shabu-shabu Mizuna and sesame sauce ◎ It is Yamaguchi brand Wagyu beef. The marbling was also delicate, with a melting softness that remained lingering. ■ Rumwan and pickles ■ ◎ Red soup stock dried Japanese pampas grass, trefoil, powdered pepper ◎ The harmony of miso soup with red broth and powdered pepper was outstanding. ■ Mizugashi ■ ◎ Apple pie and pistachio ice cream ◎ The hospitality of the staff from check-in to check-out was amazing.

We’ve spent 3 nights in this wonderful ryokan which is ideally situated to visit the numerous attractions of Hagi. We had a tatami suite opening on the beautiful garden, and was very well equipped. The public baths use sea water. The cuisine quality is of the highest standard for a price which remains reasonable. Service is impeccable.

It is conveniently located in Hagi city. Some parts of the building are old, but it was well-cleaned. There are calligraphy by past prime ministers and people related to the Meiji Restoration displayed throughout the building, giving a sense of the weight of history. We had dinner in our room and breakfast at the restaurant. There was nothing extravagant, but the food was mostly classic and reliable, and it was delicious. There are many brochures for sightseeing in the city at the front desk. It is difficult to tour the historical district of Hagi by car, but you can rent bicycles directly from the inn, so you can tour by bicycle. The bath is small and there is no open-air bath, so if you are a fan of large public baths and open-air baths, you may find it lacking.
