Mix Kaffee is a small mocha coffee bar in Chiang Mai province that coffee enthusiasts will likely know very well, with Khun Ton Thammarat Lhamphrom—both owner and resident barista—personally welcoming each coffee taster in a warm, friendly vintage atmosphere true to the authentic Japanese kissaten style.

Here, coffee is served brewed with a Moka pot, an Italian coffee maker that every household in Italy must have.
From this legendary Italian brewing method, the technique was passed to Japan, giving rise to kissaten-style cafés that the Japanese have preserved for over 100 years.
Today, this tradition has been brought to Chiang Mai, a land filled with people who are passionate about coffee culture.

To put it simply, a kissaten (often shortened to “kissa”) literally means a tea-drinking shop, a concept that emerged when Japan first adopted tea culture from China. Over time, the term came to cover other beverages such as coffee or fruit juice so a kissaten is essentially a place to sip tea or coffee and enjoy light snacks. The barista at a kissaten is called the “master,” and they typically brew coffee using simple, traditional tools rather than modern café machines. Although the method grinding beans on a hand-cranked grinder and brewing with basic equipment might seem unsophisticated, kissaten masters focus intensely on every detail and sometimes add a creative flourish to each serving. For example, while mocha coffee may be easy to make, achieving truly delicious results requires much greater precision. At Mix Kaffee, their mocha is famous among coffee enthusiasts for being neither bitter nor burnt a secret family technique preserved under the kissaten tradition for over 100 years.
After Mr. Ton married his Japanese wife, this kissaten coffee heritage was reborn. The legacy began with Mrs. Ton’s grandmother, SHIYO, who brewed coffee in the SHIYO STYLE since 1960. Passed down from generation to generation, it finally reached Mr. Ton and inspired him to open a small café in Chiang Mai. Every year he closes the shop for nearly a month to devote himself entirely to traveling to Japan in search of new premium coffee beans. That way, every cup served at Mix Kaffee is guaranteed to be a unique, one-of-a-kind experience.

In the part about the shop name that seems unrelated to Moka, this originated from when Khun Ton first opened the café and tried to find a unique selling point, creating a coffee-and-Coke fusion menu. However, that menu only generated excitement in the market at first, and ultimately Moka proved to be the answer, as Grandma suggested. Nevertheless, Khun Ton remained determined to keep the name Mix Kaffee unchanged.

Another highlight is the kissa-stand style presented as a chef-table coffee experience, or, as connoisseurs stylishly call it, “Omakase Coffee.” And when it’s a chef’s table, it has to be taken all the way served exactly like a true chef’s table to live up to its name.
